And, if you pick mushrooms - it is a pleasure, especially when the season was a success, then subsequent processing will somewhat overshadow it.
It is customary to clean the oil from the top film on the hat, which can cause bitterness during cooking and also becomes stiff. This must be done during the cleaning process, without soaking the mushrooms first in water. Dry oils are much easier to clean. Also remove the lower part of the legs, damaged and wormy areas.
Important! In order for the butter to retain all its beneficial properties, they need to be cooked for no more than 10 minutes.
Processing should be carried out immediately after harvesting, since mushrooms are very poorly stored. In case of strong need, they can be laid out evenly on the shelf of the refrigerator - so they will be saved for about 10-15 hours. But in no case do not leave the oil in baskets, bags and pails - the product in such a container is very overheated and spoiled. The peeled mushrooms are washed and left for 2-3 hours in cold water, so that the dirt and sand are completely behind. Now you need to boil the butter, and then cook according to the recipe.

After that, add a few tablespoons of sour cream, salt and leave to simmer over low heat for another 20 minutes. Serve hot with potatoes or other dishes.
- Mushroom soup. Cut boiled mushrooms, put in a pan with oil. Add chopped onions and carrots here, fry until golden brown. Pour the contents of the pan into a pan with water or chicken stock, add salt and a few diced potatoes. Cook for 30 minutes. At the end of cooking, you can add black ground pepper, herbs.

Harm and danger oily
Despite the many advantages, mushrooms have some harmful disadvantages that limit their intake in food. First of all, it should be noted that butter is considered heavy food. They contain the natural protein chitin, which is not well accepted by every organism.
When a person is completely healthy, eating oil will not cause complications - unless, of course, you follow the measure. Excessive overeating can cause poisoning, accompanied by nausea, vomiting. For the same reason, you should not get carried away with mushrooms while drinking alcohol - you need to eat them in moderation.
- Contraindications apply to people suffering from such diseases:
- disorders of the gastrointestinal tract;
- gastritis;
- renal failure;
- liver disease.
It is not recommended to give oil to children whose digestive system is still quite weak. Also at risk are future mothers - pregnancy requires more digestible products. It is harmful to eat them during lactation.
The false double of the oiler in nature is pepper mushroom, which in itself is not toxic, but has a very bitter taste. You can distinguish it by the absence of a skirt on the leg and the red tint of the inner sponge.
Contrary to popular belief that the oily skin of mushrooms is harmful, it should be noted that it does not cause any particular harm to the body. Some housewives do not clean the oil at all before cooking. The only caveat is that the skin can absorb harmful substances if mushrooms are picked in an unfavorable area, but this also applies to the body and legs.
Summing up, it can be noted that oil can bring the human body much more benefit than harm. It is only important to learn how to properly collect these "gifts of nature", prepare them and, of course, observe the measure in use.
