Boris Slivenko is the owner and founder of the Amalfey cheese factory in Kremenchug, Poltava region. Here, a tireless enthusiast invents new cheese recipes: cheese in nettles, cheese with coffee, mold cheese, but without mold and other mixes.
Slivenko began to deal with cheeses 25 years ago, but then he did not produce them, but resold them. Interested in goods, he founded a workshop and began to cook cheeses on his own.
He began his acquaintance with the production process with the release of Adyghe cheese and pigtail cheese. Now Boris Slivenko processes 100-200 liters of milk per day.
The entrepreneur mastered the production of goat cheese 3-4 years ago. He himself does not keep goats, and purchases milk from farmers. Slivenko says that combining goats and cheese making is too difficult and such people need to "put up a monument."
The coffee enthusiast makes cheese with coffee according to his own recipe, which, like the rest, is kept secret. According to Boris Slivenko, cheeses with coffee are already being produced in Ukraine, but his recipe is unique. This cheese harmoniously combines the tastes of cheese and coffee, as well as the aroma of the drink.
In the production of some cheeses, an entrepreneur uses Transcarpathian porcini mushrooms. At the same time, he uses a certain recipe that does not give the cheese "sulk".
Cheesemaker admitted that he produces only 2 main types of cheese, on the basis of which he creates his own mixes.
